PIZZA SAUCE SQUARED

We got them to tell us the “secret sauce” in their pizza. - Spiga, New Canaan.

There is something different about this pizza and it’s not just that it’s square. For those who the sauce is the most important part of the pizza. Well, we asked, and the secret is San Marzano tomatoes and how it cooks in the oven with the pizza. We find the pepperoni and roasted peppers with the fresh basil make an excellent combination especially when made well done.
