BACON AND EGG ON CROISSANT

Shallots equal perfection. - Kneads, Westport.

It’s great when a bacon and egg sandwich can bring people together. I had just finished what might be the best bacon and egg I’ve ever had, when I noticed a father and son whom both had the same sandwich. The father and I agreed. What a sandwich! We went back and forth, espousing the characteristics that made the sandwich so great: shallots, croissant, perfectly cooked egg, the endive!

This isn’t your everyday egg sandwich, and I can’t wait to go back to Kneads in Westport.
